BOLD Nut Slice
A protein packed dessert you're sure to love
Makes 10-12 serves, but be warned it's nearly impossible to stop at one!
INGREDIENTS
- 4 scoops Bold Health Protein Plus
- ¾ cup cashews
- ¼ tsp vanilla extract
- 2 tbsp almond meal
- ½ cup rolled oats
- ¼ cup coconut oil
- ⅓ cup honey
- ½ cup peanut butter
- 1 cup mixed nuts (peanuts, almonds, macadamias)
- ¼ cup dark chocolate
- 1 tsp salt
METHOD
1. Line a rectangle slice tin with baking paper.
2. Place cashews and vanilla extract in a food processor. Blitz on high for 3-4 minutes or until the mixture turns from a crumb consistency into a paste. Scrape down the sides of the food processor.
3. Add Bold protein powder, almond meal, oats and coconut oil to the food processor. Blitz until well combined and smooth.
4. Transfer the mixture to the prepared slice tin. Spread the mixture into the corners and smooth the surface with a clean spatula. Refrigerate while you prepare the nut filling.
5. Combine the honey and peanut butter in a small saucepan over medium heat. Stir to combine. Allow the mixture to gently simmer for 2-3 minutes, without coming to the boil. Remove the mixture from the heat and allow to cool slightly.
6. Add the mixed nuts to the mixture. Stir to combine then pour over the prepared base.
7. Return the slice to the refrigerator and allow to set for at least 30 minutes.
8. To melt the chocolate, place the chocolate in a microwave safe bowl and heat in the microwave for 20-30 seconds. Remove the bowl from the microwave and stir the chocolate. If the chocolate is not completely melted, it may need an additional 10-20 seconds.
9. Pour the melted chocolate over the prepared slice. Spread the chocolate into the corners and smooth the surface with a spatula. Return the slice to the refrigerator for another 10 minutes.
10. Cut the slice into 10-12 squares and sprinkle with a pinch of salt before serving.
11. Store the slice in an airtight container in the refrigerator.
