Ingredients
1 Can (400ml) coconut cream *
1 Cup cashews **
1/3 Cup monk fruit syrup
Double espresso shot
3 Scoops Health Protein Boost
1 Lemon juiced
1/3 Tsp vanilla extract
Pinch of Celtic salt

Instructions

1. To your blender add all the ingredients. Mix until smooth and creamy. Pour the mixture into your non stick ice-cream moulds.

2. Optional you can add a few pieces of chopped dark chocolate chips inside the ice cream. Place the ice cream mould in the freezer to set for about 4-6 hours until they have solidified.

3. Once ready, remove them from the moulds and coat them with a sugar free dark chocolate. Place the ice-creams on a non stick tray lined with baking paper once coated. Allow them to set in the freezer for 5min.

4. Enjoy, keep the rest in an airtight container in the freezer for up to 2 weeks.

Notes: *Make sure the can of coconut cream is kept in the fridge the night before making the ice creams. ** Cashews must be soaked for min 8 hours. This allows them to become creamy and easier to digest.
